Ginger and Carrot Soup Recipe – Ingredients:
- Vegetable Oil – 2 tablespoon
- Onion (roughly chopped) – 1
- Carrots (roughly chopped) – 750 g (1 1/2lb)
- Celery (roughly chopped) – 2 sticks
- Bay Leaf – 1
- Ginger (finely sliced) – 5 cm (2 in) piece
- Turmeric – 2 tablespoon
- Garlic (finely sliced) – 2 cloves
- Vegetable Stock – 1 ltr (1 3/4pt)
For Garnishing:
- Coriander leaves (roughly chopped)
- Onions (sliced) – 4 spring
- Green Chilli (diced) – 1
- Sesame Oil – 4 tablespoon
- Lime Juice – 2 tablespoon
Ginger and Carrot Soup Recipe – Directions:
Cook this healthy and warming soup with fresh carrots, ginger and turmeric. Topped with spicy garnish, this tasty and delicious soup is filled with flavors for an awesome lunch or dinner.
Heat vegetable oil in the large pan over medium heat. Add onion, carrot, bay leaf and celery and then cook for 10 minutes. Add ginger, garlic and turmeric. Stirring occasionally, mix well and cook for 5 minutes.
Pour over the stock & bring to the boil. Reduce heat and simmer for 15 minutes until carrots are tender. Remove bay leaf and allow the soup to cool and to smooth completely, use a food processor or stick blender. Return to heat and warm the soup.
Combine all the ingredients for garnishing purpose in a small bowl. Serve the delicious carrot soup into bowls and top a coriander garnish.
