Shrimp Potato Soup Recipe – Ingredients:
- Bacon (sliced) – 3/4 Cup
- Celery (diced) – 1/2 Cup
- Onion (diced) – 1/2 Cup
- Garlic (minced) – 1 Clove
- Chicken Broth – 3 Cups
- Potato (diced) – 3 Cups
- Shrimp (medium cooked | shells & tail removed | cut into 3 pieces each) – 1 Pound
- Fresh Parsley (chopped) – 1 Teaspoon
- Red Pepper (crushed) – 1/4 Teaspoon
- Milk – 1 Cup
- Heavy Cream – 1/2 Cup
- Salt & Pepper – To Taste
Shrimp Potato Soup Recipe – Directions:
- Cook bacon in a large pot for 10 minutes over the medium heat, stirring occasionally. Now add onion, garlic and celery and cook until the bacon is crispy and onions are translucent.
- Now add potatoes and chicken broth. Cook over high heat for additional 10 minutes, stirring occasionally.
- Now reduce the heat to medium and then add fresh parsley, shrimp and red pepper. After that add milk and the heavy cream. Now cook for more 10 minutes, or until the soup reach the eating temperature. Now add salt and pepper to your taste.
- Serve with saltines or the oyster crackers.
