Easy Potato Soup Recipe – Ingredients:
- Bacon slices (diced) – 5
- Bacon grease/butter – 3 Tablespoons
- White/Yellow Onion (diced) – 1 Cup
- All-Purpose Flour – 1/4 Cup
- Chicken Stock – 2 Cups
- Milk (warmed) – 2 Cups
- Potatoes/Yukon Gold Potatoes (peeled & diced) – 1.5 Pounds
- Sharp Cheddar Cheese (shredded) – 1 Cup
- Plain Greek Yogurt / Sour Cream – 1/2 Cup
- Kosher Salt – 1 Teaspoon
- Black Pepper (freshly grounded) – 1/2 Teaspoon
For Garnishing:
- Green Onions (thinly-sliced)
- Chives
- Cheese (Extra Shredded)
- Bacon
- Sour Cream
Easy Potato Soup Recipe – Directions:
Over high to medium heat, heat a large stockpot. Add bacon (diced) and cook until they are crispy with stirring periodically. When the bacon turn crispy, transfer to a separate plate and have a reserve of about 3 tablespoons of bacon grease in stockpot.
Add white/yellow onion and saute for about 5 minutes until the onion is soft, stirring occasionally. Sprinkle all-purpose flour on the onion and stir for combined. Saute for 1 more minute to cook the flour. Now stir in chicken stock, milk, potatoes, and bacon (cooked) until combined. Cook until the mixture reaches the simmer.
Reduce heat to Low-Medium and cover, simmer for 10 – 15 minutes or until potatoes are soft. Occasionally Stir to avoid bottom burn.
When the potatoes are tender, stir in sharp cheddar cheese and Greek yogurt/sour cream). Add salt & pepper to taste.
Serve warm and garnish the soup with your favorite toppings.
