Healthy Vegetable Soup Recipe – Ingredients:
- Olive Oil – 2 1/2 Tablespoon
- Yellow Onion (chopped) – 1 Medium (1/2 Cups)
- Carrots (peeled & chopped) – 4 (2 Cups)
- Celery (chopped) – 3 (1 1/4 Cups)
- Garlic (minced) – 4 Cloves
- 4 Cans Low-Sodium Vegetable Broth / Chicken broth – 14.5 oz/Can
- 2 Cans tomatoes (Diced & un-drained) – 14.5 oz/Can
- Potatoes (Peeled & 1/2-inch thick diced ) – 3 Medium (3 Cups)
- Fresh Parsley (chopped) – 1/3 Cup
- Bay Leaves – 2
- Thyme (dried) – 1/2 Tablespoon
- Salt & Black Pepper (freshly ground) – To Taste
- Green Beans (Chopped frozen/fresh) – 1 1/2 Cups
- Corn (frozen/fresh) – 1 1/4 cups
- Peas (frozen/fresh) – 1 Cup

- Heat the olive oil over a medium heat in a large pot. Add carrots, celery, onions and then saute for 3-4 minutes then add garlic cloves and saute for more 30 seconds longer. Pour in chicken/vegetable broth and add potatoes, tomatoes, bay leaves, parsley, thyme and then season it with salt & black pepper to taste.
- Bring the soup to a boil and then add the green beans. Now reduce the heat to low – medium. Cover & simmer until the potatoes are tender, about 20-30 min. Add peas and corn & cook for 5 more minutes.
- Serve warm with your desired toppings.
