Slow-Cooker Tortilla Chicken Soup Recipe – Ingredients:
- Can Low-Sodium Chicken Broth – 2 1/2 (14.5 oz) (4 1/2 cups)
- Can Tomatoes (petite diced) – 1 (14.5 oz)
- Yellow Onion (finely chopped) – 3/4 Cup
- Garlic (pressed with garlic crusher) – 4 Cloves
- Chili Powder – 2 1/2 Tablespoon
- Ground Cumin – 1 1/2 Tablespoon
- Paprika – 3/4 Tablespoon
- Ground Coriander – 1/2 Tablespoon
- Salt & Black Pepper (freshly ground) – To Taste
- Boneless Skinless Chicken Breasts – 1 1/2 lbs
- Can Black Beans (drained & rinsed) – 1 (14.5 oz)
- Frozen Corn – 1 1/2 Cup
- Fresh Lime Juice – 1 Tablespoon
- Fresh Cilantro (Chopped) – 1/4 Cup
For Garnishing:
- Tortilla Chips/Tortilla Strips
- Cheddar/Monterey Jack Cheese (Shredded)
- Avocado and Roma Tomatoes (Diced)

Slow-Cooker Tortilla Chicken Soup Recipe is one of the best slow cooker Soup Recipe with sour cream, cheese and Tortilla chips. But if you want to leave out these items (Chips, Sour Cream or Cheese), still you will get an amazing and healthy dinner/lunch. But it’d be crazy to leave out all the good stuff.
Pour the chicken broth and the diced tomatoes into the slow cooker. Add garlic, onion, chili powder, paprika, cumin, coriander and then season it with the salt & black pepper to taste. After that add the chicken breasts and cover with lid, now cook on a LOW heat for about 6 hours, or until the chicken is cooked through.
Remove the chicken and shred it, then return to your slow cooker to add corn, cilantro, black beans,lime juice and stir. Allow to cook until heated properly.
Serve this hearty Tortilla Chicken Soup warm with tortilla chips/strips and cheese and/or other optional garnishing ingredients.
