Spicy Zucchini Soup Recipe – Ingredients:
- Olive Oil – 4 Tablespoons
- Onion (finely chopped) – 1
- Jalapeno Chili (seeds, stems and ribs removed) (chopped) – 1/2 ( Add more if you want your soup to be more Spicy)
- Garlic (chopped) – 3 Cloves
- Zucchini (Chopped) (skin on) – 2 pounds (about 5-6 cups)
- Day-old Bread (chopped) – 1 1/2 Cup
- Chicken Broth (use vegetable broth for the vegetable soup) – 3 Cups
- Water – 1 Cup
- Fresh Mint Leaves (spearmint) (chopped) – 1/2 Cup
- Fresh Cilantro (chopped) (optional) – 1/2 Cup
- Lemon Juice – 2 Teaspoons
- Salt & Pepper – To Taste

Spicy Zucchini Soup Recipe is one of the quick soup recipes, it is perfect for the midweek meal. And you can keep it in the fridge for a week at least. You can enjoy this Zucchini Soup Recipe both chilled and hot.
1- Heat olive oil in a pot over medium/high heat. Now add onion & jalapeno chili and saute for 5 min until onions are translucent, but not turned brown. Add garlic & zucchini and saute for 3-4 min, stirring often. Add salt depending on your taste.
2- Add broth, bread and water, and bring to simmer. Reduce the heat and simmer for 20 min.
3- Turn off the heat and add mint & cilantro (if using). Puree in the blender/food processor until smooth. If required work in batches. Or you can use an immersion blender.
4- Pour the soup in a pot. Add lemon juice, salt & pepper to your taste.
