Vegetable Beef Soup Recipe – Ingredients:
- Olive Oil – 2 Tablespoons
- Sirloin Steak/beef stew meat (1 inch cubes) – 1.5 lbs
- Onion (chopped) – 1 Large
- Garlic (minced) – 3 Cloves
- Carrots (diced) – 1 Cup
- Celery (diced) – 1 Cup
- Potatoes (Peeled & diced) – 1 lbs
- Beef Stock – 8 Cups
- Bay Leaves – 2
- Can Diced Tomatoes with juice – 1 (28 oz.)
- Worcestershire Sauce – 1 Tablespoon
- Italian Seasoning – 1 Tablespoon
- Salt – 1 Teaspoon / To Taste
- Freshly-Ground Black Pepper – 1/2 Teaspoon / To Taste
- Fresh Parsley (chopped) – For Garnishing
Vegetable Beef Soup Recipe – Directions:
This Vegetable Beef Soup Recipe is definitely one of the delicious beef vegetable soup on the planet. With all the different vegetables such as potatoes, carrots, celery, etc you will have an amazing healthy and nutrient rich soup. If you have some picky eaters in your house, you can easily tweak this recipe by adding more vegetables or more beef. I would also point out that the slow cooker version of Vegetable Beef Soup Recipe is also fantastic. I suggest browning the beef in oil in the skillet before adding to your slow cooker along with other ingredients.
Vegetable Beef Soup Recipe – Stovetop Directions:
- Heat Olive oil (1 Tbsp) over the medium – high heat in large stockpot. Now add half the steak and cook for about 2 minutes until well browned (stirring frequently). When browned, remove the steak with slotted spoon and transfer it to a separate plate. Now add the remaining steak and cook for 2 min until browned same as before. When browned, remove and transfer the steak to a separate plate.
- Reduce heat to medium – low, add remaining Olive oil (1 tablespoon) to the pot. Add onion and cook for about 5 min ( stirring occasionally). Add carrots, garlic, potatoes & celery and continue sauteing for about 3 min.
- Now add all the remaining ingredients along with cooked steak and stir to combine. stirring occasionally, bring to boil. Reduce heat to low – medium, cover the pot and simmer until the steak and vegetables are tender or for about 20 – 30 minutes. Season it with more salt & pepper if needed.
- When ready to serve, remove bay leaves. Serve this soup warm and garnish it with fresh parsley (chopped) if desired.
Vegetable Beef Soup Recipe – Slow Cooker Directions:
- Brown the Steak same as above, and then transfer all the steak to slow cooker.
- Add remaining ingredients to slow cooker and then stir to combine.
- Cook on high heat for 3 – 4 hours or on low heat for 6 – 8 hours until the vegetables and steak is tender. If needed, season with additional salt & pepper.
- When ready to serve, remove bay leaves. Serve this soup warm and garnish it with fresh parsley (chopped) or with your desired toppings.
